Make the dough
In a large mixing bowl, combine 2 cups whole wheat flour and 1 tsp salt. Add 1 tsp oil/ghee and mix. Gradually add about 3 tablespoons of water to start, then knead, adding additional water (1–3 tablespoons) as needed until you have a soft, smooth, pliable dough. Knead for 5–7 minutes. Cover the dough with a damp cloth or plastic wrap and rest for at least 20–30 minutes.
Potato Filling (Aloo)
Flavor the filling
To the mashed potatoes add 1 tablespoon finely chopped green chili, 2 tablespoons chopped cilantro, 1 teaspoon minced garlic (if using), and 1/4 cup finely chopped onion (optional). Add 1/2 tsp ground cumin, 1/2 tsp ground coriander, 1/2 tsp amchur or 1/2 tsp lemon juice, 1/4 tsp red chili powder, 1/4 tsp garam masala, 1 tsp salt, and 1/4 tsp black pepper (optional). Mix thoroughly until the spices are evenly distributed. Taste and adjust salt or lemon/amchur as needed. If mixture seems too wet, cook briefly in a nonstick pan to dry it slightly, then cool before stuffing.
Portion the filling
Divide the filling into 8 equal portions (about 1/3 cup each). Keep them covered to prevent drying out while you roll parathas.
Assembling and Cooking Parathas
Portion the dough
After resting, divide the dough into 8 equal dough balls (about 2–2.5 inches diameter). Roll each ball lightly between your palms to smooth.
Stuff and roll
Flatten one dough ball into a small disc (about 3 inches). Place one portion of the potato filling in the center. Bring the edges of the dough together to enclose the filling, pinching to seal. Flatten the sealed ball gently, dust with a little flour, and using a rolling pin, roll it out carefully into a circle about 6–7 inches in diameter. Roll gently from center to edges to avoid the filling breaking through; if filling leaks, reseal and try again. Use minimal dry flour while rolling.
Cook on tawa or skillet
Heat a heavy skillet or tawa over medium-high heat until hot. Place the rolled paratha on the hot surface. Cook for 30–45 seconds until small bubbles form, then flip. Spread about 1 teaspoon of oil or ghee on the cooked side, flip again and press gently with a spatula, cooking 30–45 seconds more until golden brown spots form. Flip once more, apply another small amount of oil/ghee to the other side if desired, and cook for another 20–30 seconds, pressing and rotating so both sides brown evenly. Repeat with remaining dough and filling. Total cooking time per paratha: ~2–3 minutes.
Finish and keep warm
As you cook, place finished parathas on a plate and smear a little butter or ghee on top to keep them soft and flavorful. Stack and cover with a clean kitchen towel to retain warmth and moisture.
