Caramel

Prepare caramel

Set an 8-cup saucepan or small heavy-bottomed pot over medium heat. Combine 1/2 cup granulated sugar, 2 tablespoons water, and 1 teaspoon light corn syrup (if using). Without stirring, swirl the pan gently until the sugar dissolves and begins to simmer. Once it starts to color at the edges, watch carefully and swirl occasionally until it reaches a deep amber (about 6–8 minutes). Remove from heat immediately.

Quickly and carefully pour the hot caramel into four 6-ounce ramekins (or one 6-inch flan mold), tipping each ramekin to coat the bottom evenly. Set ramekins aside to let the caramel harden while you make the custard. Be cautious — caramel is extremely hot.

Infuse milk with vanilla

Slice the Veracruz vanilla bean lengthwise and scrape the seeds with the back of a knife. In a small saucepan, combine 1 cup whole milk, 1 cup heavy cream, and the vanilla seeds plus the scraped pod. Warm over medium heat until just simmering and small bubbles form at the edge (do not boil), about 5 minutes. Remove from heat and let steep for 15 minutes to intensify vanilla flavor.

Warm evaporated & condensed

While the vanilla infuses, gently warm 1/2 cup evaporated milk and 1/2 cup sweetened condensed milk together in a separate bowl or small saucepan just until they are fluid and easier to incorporate (do not boil). Set aside.

Make custard base

After steeping, remove and discard the vanilla pod. Reheat the infused milk just until it is warm (if it cooled). In a mixing bowl, whisk together 4 large eggs, 1 egg yolk, 1/4 cup granulated sugar, and 1/8 teaspoon fine sea salt until combined and slightly frothy. Slowly temper the warm vanilla milk into the eggs by whisking and adding the milk in a thin steady stream to avoid scrambling the eggs.

Stir in the warmed evaporated and condensed milks until fully incorporated. Strain the custard mixture through a fine-mesh sieve into a clean pitcher to remove any coagulated bits and ensure a silky texture.

Fill ramekins and bake in bain-marie

Pour the strained custard evenly into the prepared caramel-coated ramekins (leave a little headspace). Place the filled ramekins in a roasting pan and add hot water to the pan until it reaches halfway up the sides of the ramekins (bain-marie).

Bake in a preheated oven at 325°F (160°C) for 35–45 minutes, or until the custard is set at the edges but still slightly jiggly in the center (an instant-read thermometer inserted near the center should read about 175°F / 80°C). Remove ramekins from the water bath and let cool to room temperature on a wire rack. Then refrigerate for at least 4 hours, preferably overnight, to develop the tres leches texture and chill thoroughly.

Cocoa Nib Crunch & Finish

Make cocoa nib crunch

In a small skillet over medium-low heat, melt 1 tablespoon unsalted butter. Add 2 tablespoons packed light brown sugar and stir until sugar dissolves and the mixture becomes syrupy. Add 2 tablespoons cocoa nibs and 1 tablespoon toasted slivered almonds; toss to coat. Cook 1–2 minutes until fragrant and the nibs/glasslike bits begin to crisp. Immediately transfer the mixture to parchment paper and spread into a thin layer. Sprinkle with 1/8 teaspoon fine sea salt and let cool until hard — about 10–15 minutes. Break into small shards or coarse pieces.

Unmold and plate

Run a thin knife around the edge of each chilled ramekin to loosen. Place a small plate inverted over the ramekin, quickly flip both together, and gently tap to release the flan onto the plate so the caramel sauce flows over the custard. If necessary, warm the outside of the ramekin with a kitchen torch or dip the bottom in hot water for 3–5 seconds to help release.

Scatter a tablespoon of cocoa nib crunch over each flan, allowing some pieces to sit on top and some to fall into the caramel pool for texture contrast. Garnish with 1 micro mint leaf per flan if using.
