Prepare glass

If desired, chill a Collins or highball glass by filling it with ice water while you mix the cocktail. Discard the ice water before pouring the drink.

Add ingredients to shaker

In a cocktail shaker, add 2 oz Almave Ámbar (amber mezcal or agave spirit), 2 oz pineapple juice, 1 oz fresh orange juice, 1 oz guava puree or nectar, 0.5 oz fresh lime juice, and 0.25 oz agave syrup (if using).

Add ice and shake

Fill the shaker with ice (about 3/4 full) and shake vigorously for 10–12 seconds until the shaker is cold to the touch and the ingredients are well combined and slightly frothy from the juices.

Strain and serve

Discard the chilling ice from the glass (if you chilled it). Fill the glass with fresh ice. Double-strain the cocktail into the prepared glass using a Hawthorne strainer and a fine mesh strainer to catch any pulp or small ice shards.

Garnish & Finish

Garnish the drink with a pineapple wedge on the rim and a lime wheel. Add a mint sprig for aroma if desired. Serve immediately.
