Shrimp & Marinade

Prepare marinade

In a medium bowl combine 2 tbsp olive oil, 1 tbsp lime juice, 2 tsp minced garlic, 1 tsp minced chipotle, 1 tsp smoked paprika, 1/2 tsp ground cumin, 1 tsp kosher salt and 1/2 tsp black pepper. Whisk until blended.

Marinate shrimp

Add the peeled and deveined shrimp to the marinade and toss to coat evenly. Cover and refrigerate for 15–20 minutes (no longer than 30 minutes to avoid over-tenderizing).

Grill/roast shrimp

Preheat a grill or grill pan to medium-high (about 400°F / 200°C). If using stovetop, heat a cast-iron skillet until shimmering. Remove shrimp from marinade, shaking off excess. Grill or sear shrimp 2–3 minutes per side until opaque and slightly charred at edges. Transfer to a plate and keep warm.

Chipotle Aioli

While shrimp marinates, whisk together 1/2 cup mayonnaise, 1/4 cup Greek yogurt, 1 tsp minced chipotle, 1 tsp lime juice, 1/2 tsp honey and 1/4 tsp salt in a small bowl until smooth. Taste and adjust heat or acidity by adding more chipotle or lime. Refrigerate until assembly.

Pico de Gallo

Combine 1 cup diced tomatoes, 1/4 cup finely diced white onion, 2 tbsp chopped cilantro, 1 minced small jalapeño, 1 tbsp lime juice and 1/4 tsp salt in a bowl. Stir and let sit 10–15 minutes at room temperature to meld flavors. Refrigerate if making ahead.

Roasted Tomatillo Salsa

Roast

Preheat broiler or grill. Place husked tomatillos (about 6 oz), 1 serrano or jalapeño, 1 garlic clove and 1/4 cup quartered onion on a foil-lined sheet or grill grate. Broil or grill, turning occasionally, until charred and softened, about 6–8 minutes.

Blend

Transfer roasted ingredients to a blender or food processor. Add 2 tbsp cilantro, 1 tbsp lime juice and 1/2 tsp salt. Pulse until you reach a slightly chunky salsa consistency. Taste and adjust salt or heat. Chill or serve warm.

Assembly & Serving

Warm tortillas briefly on the grill or in a hot dry skillet, about 20–30 seconds per side, until pliable and lightly charred. Keep wrapped in a clean towel to stay warm.

Build each taco: place a small handful (about 1/4 cup) of thinly sliced cabbage in the center of a tortilla, add 3–4 grilled shrimp, drizzle 1–2 tsp chipotle aioli, spoon 1–2 tbsp pico de gallo and 1 tbsp roasted tomatillo salsa. Garnish with cilantro leaves and a squeeze of lime. Add hot sauce if desired.

Serve immediately with extra lime wedges on the side.
