Prepare pineapple
Trim top and bottom
Place the whole pineapple on a sturdy cutting board. Use a large, sharp chef's knife to slice about 1/2 inch (1–1.5 cm) off the top (crown) and 1/2 inch off the base so the fruit sits flat.
Remove the skin
Stand the pineapple upright on the flat base. Working from top to bottom, cut downward following the curve of the fruit to remove the skin in strips, slicing deep enough to remove the eyes but without wasting too much flesh. Rotate and repeat until all skin is removed.
Remove the eyes
Inspect the surface for any remaining brown 'eyes'. Use the tip of the knife to carve small V-shaped grooves to remove them, or slice thin slices to eliminate any remaining spots.
Core and cut
Option A — Rings: Lay the pineapple on its side and slice into 1/2-inch (1–1.5 cm) rings. Use a small round cutter or a paring knife to remove the fibrous core from each ring. Option B — Spears/Wedges: Stand the pineapple upright and slice it lengthwise into quarters, then cut out the triangular core from each quarter and slice the quarters into spears or bite-size wedges. Option C — Cubes: After coring quarters, slice off the flesh from the skin and cut into 3/4-inch (2 cm) cubes. Choose the cut you prefer.
Chill (if serving fresh)
Place cut pineapple in a bowl and refrigerate for at least 15 minutes if you want it chilled before serving.
Optional finishing and serving
Brighten with lime and season
If using, drizzle the cut pineapple with 1 tablespoon fresh lime juice to brighten the flavor. Sprinkle the 1/4 teaspoon coarse sea salt evenly to enhance sweetness.
Add herbs and sweetener
Scatter 1 tablespoon chopped fresh mint over the pineapple. If you like it extra sweet, drizzle 1 teaspoon honey or agave and toss gently to coat.
Dust with spice
Optionally, sprinkle a light pinch (about 1/8 teaspoon) of ground cinnamon over the fruit for warmth and stir gently.
Serve
Transfer pineapple to a serving bowl or platter. Serve immediately or keep refrigerated up to 24 hours in an airtight container for best texture and flavor.
