Prepare Coconut for Serving

Hollow the coconut

If using a young whole coconut: carefully puncture the eyes with a screwdriver or sharp tool to drain water, reserve water if desired. Use a cleaver or heavy knife to split or cut off the top to create an open cup. Remove excess meat if needed so there's about 1/2–1 inch of shell thickness as a bowl. If using a pre-halved or decorative shell, ensure it's clean and dry.

Chill the prepared coconut shell in the refrigerator or freezer for 5–10 minutes while you prepare the cocktail to keep the drink cold longer.

Make the Pina Colada

Combine ingredients

In a blender add 2 oz white rum, 1.5 oz cream of coconut, 3 oz pineapple juice, 0.5 oz fresh lime juice and 1.5 cups crushed ice. If making nonalcoholic, substitute the rum with 2 oz nonalcoholic rum substitute or extra pineapple juice.

Blend

Blend on high until smooth and frothy, about 10–20 seconds depending on blender power. The texture should be thick but pourable. If too thick, add 0.5 oz pineapple juice and blend briefly. If too thin, add a small handful (about 1/4 cup) of crushed ice and pulse.

Taste and adjust

Taste for balance. Add up to 0.25 oz more cream of coconut for sweetness, or 0.25 oz more lime for brightness, blending briefly after adjustments.

Assemble & Garnish

Pour the blended Pina Colada into the chilled coconut shell, filling to about 1/4 inch from the rim.

Skewer the pineapple wedge and maraschino cherry on the toothpick and rest it on the rim or lay across the top. Insert pineapple leaves into the back of the shell for height if using.

Finish with a light dusting of grated nutmeg or a sprinkle of toasted coconut flakes (about 1/8–1/4 tsp) over the foam for aroma, if desired.

Serve immediately with a straw and a small spoon for the coconut meat. Advise guests to sip the cocktail and then scrape remaining coconut meat if they wish.

Cleanup Notes

If you used reserved coconut water, discard or refrigerate for another use. Rinse the coconut shell after use to remove coconut residue; it can be reused as a serving vessel after washing.
