Prepare glass and muddle

Place 10 fresh mint leaves and the lime wedge (squeeze the wedge into the glass first, then drop it in) into a sturdy highball or Collins glass. Add 0.75 oz simple syrup. Using a muddler or the handle of a wooden spoon, gently press and twist the mint and lime about 6–8 times — just enough to bruise the leaves and release oils and lime aroma, but do not pulverize the mint (avoid shredding, which can make the drink bitter).

Add spirits and ice

Pour 2 oz white rum and 1 oz fresh lime juice into the glass over the muddled mint and lime. Fill the glass roughly 2/3 full with crushed ice (about 1 cup).

Mix and top

Using a long spoon or bar spoon, gently stir the mixture 6–8 times to lift the mint leaves through the cocktail and chill the drink uniformly. Top the glass with about 2 oz club soda (adjust to taste) and give one or two gentle stirs to incorporate. If using, add 2 dashes of Angostura bitters on top for a subtle aromatic note.

Garnish and serve

Add a fresh mint sprig as garnish: clap the sprig between your palms once to release oils, then place it in the drink. Optionally, add an extra lime wedge on the rim. Serve immediately with a straw, sipping near the mint so aroma complements each sip.
