Method
Prep Goji & Chia
Soak goji berries
Place the 3 tablespoons dried goji berries in a small bowl and cover with 1/4 cup warm water. Let soak 8–10 minutes until plump. Drain, reserving the soaking liquid.
Combine chia seeds with 2 tablespoons of the reserved goji soaking liquid (or water) and let sit 5 minutes to thicken. Stir to remove clumps.
Blend Smoothie
Add the 1 1/2 cups diced ripe mango and 1/2 cup frozen mango to a high-speed blender.
Spoon in the soaked goji berries (drained) and add the yogurt, cold water, and the chia-goji mixture.
Add 2 tablespoons fresh lime juice and 1 teaspoon lime zest, 1 teaspoon freshly grated ginger, and 1 tablespoon honey or agave.
If you want a thicker, colder smoothie, add up to 4 ice cubes. Blend on high for 45–60 seconds until completely smooth and the chia seeds are dispersed.
Taste and adjust: add up to 1 more tablespoon honey if you prefer sweeter, or another teaspoon lime juice if you want more brightness. If too thick, add up to 1/4 cup more cold water and blend briefly.
Serve & Garnish
Pour the smoothie into two tall glasses (or one large jar).
Top each serving with the reserved extra 1 tablespoon goji berries, a lime wheel or wedge on the rim, and 2–3 fresh mint leaves.
Serve immediately with a straw. If making ahead, store in an airtight container in the refrigerator up to 8 hours; stir or re-blend lightly before serving.
