Combine and shake

Add aged rum, fresh lime juice, orange curaçao, orgeat, and simple syrup to a cocktail shaker. Add ice cubes (about 4 standard cubes) and shake vigorously for 10–15 seconds until chilled (exterior of shaker becomes frosty).

Prepare glass

Fill a double old-fashioned glass or tiki mug with crushed ice to about 3/4 full.

Strain

Double-strain the shaken mixture over the crushed ice in the prepared glass using a Hawthorne strainer and, if desired, a fine mesh strainer to remove small shards of ice and pulp.

Float dark rum

Carefully pour the dark rum over the back of a spoon so it floats on top of the drink, creating a layered look and stronger rum aroma.

Garnish & Serve

Garnish with a lime wheel perched on the rim, a fresh mint sprig (slap the mint once between your palms to release aroma) tucked into the ice, and an optional cocktail cherry. Serve with a short straw so the drinker can taste the float if desired.

Estimated final adjustment: taste and, if desired, add 1/4 oz more simple syrup for sweetness or 1/4 oz more lime juice for brightness. Stir gently if you adjust.
