Check and drain

Locate the three 'eyes' on one end of the coconut. Poke a clean screwdriver, metal skewer, or the tip of a knife into the softest eye (usually one is softer). Drain the coconut water into the bowl. Strain the liquid through the strainer to remove any shell fragments and set aside for drinking or use.

Crack open the shell

Wrap the coconut in the kitchen towel or hold with an oven mitt to steady it. Use the hammer or the back of a heavy spoon to strike the coconut firmly along its equator, rotating it as you tap. After several strikes you will hear a crack and the shell will split into two or more pieces. If it doesn't split easily, continue tapping evenly until it does.

Separate meat from shell

Working over the bowl to catch any residual water, wedge the tip of the knife between the white meat and inner shell and pry gently to loosen sections. Alternatively, use a spoon or coconut scraper to pry the meat free in chunks. Take care — the shell edges can be sharp. Remove all white meat and set the shell aside for compost or craft use.

Remove brown skin (optional)

If you prefer pure white coconut meat, use the knife to carefully peel away the thin brown testa from the flesh, or use a vegetable peeler. This step is optional; the brown skin is edible.

Optional finishing & storage

Serve fresh

Cut or slice the coconut meat into bite-sized pieces. Optionally sprinkle with a pinch of salt and a squeeze of lime or lemon to brighten the flavor. Serve immediately with the reserved coconut water on the side.

Store for later

Pat the coconut meat dry with a paper towel and place it in a refrigerator-safe container or zip-top bag. Refrigerate for up to 4–5 days. For longer storage, freeze pieces on a tray until solid, then transfer to a bag for up to 3 months. Keep coconut water refrigerated and use within 24–48 hours.
