Prepare glass
Fill a large wine glass generously with ice cubes so the glass is well chilled and there's room for liquid plus ice movement.
Add Aperol
Pour 2 parts (about 60 ml if using 30 ml as a part) of chilled Aperol directly over the ice. Pouring Aperol first helps it gently coat the glass for visual layering.
Add Prosecco
Slowly pour 3 parts (about 90 ml) of chilled Prosecco into the glass at a slight angle to preserve bubbles and create a layered look. Pour gently to avoid excessive foam.
Top with soda
Add 1 part (about 30 ml) of chilled soda water to lighten the drink. Pour slowly down the side or over the back of a spoon if you want to reduce agitation.
Stir gently
Give the drink one or two gentle short stirs with a bar spoon to combine ingredients while retaining effervescence. Avoid prolonged stirring.
Garnish and serve
Garnish with a fresh orange wheel placed on the rim or floated in the glass. Serve immediately while chilled and sparkling.
