1. Prepare the Ingredients
Slice the beef sirloin into thin strips. Clean and slice the mushrooms. Chop the onion and mince the garlic.
2. Cook the Noodles
In a large pot, bring salted water to a boil. Cook the noodles according to package instructions (or homemade dough) until al dente. Drain and set aside.
3. Brown the Beef
In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the beef strips and cook until browned. Remove the beef from the skillet and set aside.
4. Sauté the Vegetables
In the same skillet, add another tablespoon of butter. Add the onions and garlic, sautéing until translucent. Then add the mushrooms and cook until they release their moisture.
5. Make the Sauce
Sprinkle the flour over the mushroom mixture and stir to combine. Slowly pour in the beef broth, stirring constantly until the sauce thickens. Return the beef to the skillet.
6. Add Sour Cream
Reduce the heat to low. Stir in the sour cream and season with salt and black pepper. Mix well and heat through.
7. Serve
Serve the beef stroganoff over the cooked noodles. Garnish with fresh parsley if desired.
