Prepare Ingredients

Rinse the lentils under cold water and set aside. Chop the onion, carrots, celery, and garlic.

Sauté Vegetables

In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.

Add Garlic and Spices

Stir in the minced garlic and cook for another 1-2 minutes. Then add the cumin, coriander, turmeric, paprika, and berbere spice blend, stirring well to combine.

Combine Lentils and Liquid

Add the rinsed lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce heat to low and let it simmer.

Simmer the Stew

Cover and let the stew simmer for about 30-40 minutes, or until the lentils are tender. Stir occasionally and add water if it gets too thick.

Season and Serve

Once the lentils are cooked, season with salt and black pepper to taste. Serve hot, garnished with fresh herbs if desired.
