Prepare the Caramel

In a saucepan, combine granulated sugar and honey over medium heat. Stir until sugar dissolves and turns into a golden caramel. Quickly pour the caramel into a round baking dish, swirling to coat the bottom and sides. Set aside to harden.

Make the Chocolate Mixture

In a separate saucepan, heat the milk over medium heat until warm. Add the chopped dark chocolate and stir until melted and smooth. Remove from heat.

Prepare the Egg Mixture

In a large bowl, whisk the eggs and vanilla extract together. Slowly add the warm chocolate mixture to the egg mixture, whisking continuously to avoid curdling.

Combine and Bake

Pour the chocolate-egg mixture into the prepared caramel-coated baking dish. Place the dish in a larger baking pan filled with water (water bath). Bake in a preheated oven at 350°F (175°C) for about 45-50 minutes or until set.

Cool and Serve

Remove the baking dish from the water bath and let it cool to room temperature. Refrigerate for at least 2 hours before serving. To serve, invert onto a plate, sprinkle with crumbled sbrisolona and cocoa powder.
