Combine ingredients
In a cocktail shaker add 2 oz gin, 0.5 oz dry vermouth, 0.5 oz fresh lime juice, 0.5 oz ginger liqueur (or ginger syrup + 0.25 oz neutral spirit), 0.25 oz green chartreuse, 0.25 oz simple syrup, 2 dashes angostura bitters, and 0.5 oz egg white if using.
Wet shake
Add a cup of ice to the shaker, then shake hard for 12–15 seconds until the shaker is cold to the touch and well chilled (this both chills and properly dilutes the drink).
Finish
Express a lime twist over the top to release oils (or run the lime wheel around the rim) and drop the twist into the drink. Optionally garnish with a small piece of candied ginger or a microgreen.
Service & Notes
Serve immediately while the foam is fresh. The TAO balances herbal complexity from the chartreuse and vermouth, spice and brightness from ginger and lime, and smoothness from the egg white. Adjust sweetness by increasing or decreasing the simple syrup by 0.25 oz to taste.
