Brew and chill tea (can be done ahead)
Brew a strong chamomile tea by steeping 1 chamomile tea bag or 1 tablespoon loose chamomile in 4 oz (120 ml) of just-off-boil water for 5 minutes. Strain and chill until cold. Measure 1 oz chilled tea for the cocktail.
Combine ingredients
In a cocktail shaker add the gin (2 oz), elderflower liqueur (1/2 oz), fresh lemon juice (3/4 oz), chilled chamomile tea (1 oz), simple syrup (1/2 oz), and bitters (2 dashes). If using egg white, add 1/2 of a fresh egg white now.
Dry shake (if using egg white)
If you added egg white, shake the mixture vigorously without ice for about 15 seconds to emulsify and create foam. This step helps produce a silky mouthfeel.
Shake with ice
Add the ice to the shaker (about 1 cup) and shake vigorously for 12–18 seconds until the outside of the shaker is cold and well-chilled.
Strain
Double-strain the cocktail into a chilled coupe or Nick & Nora glass using a Hawthorne and fine mesh strainer to remove ice shards and any solids for a clean, smooth drink.
Garnish & serve
Sprinkle the pinch of edible chamomile petals gently over the foam (or surface) as a delicate aromatic garnish.
Serve immediately. Recommend glassware: chilled coupe or Nick & Nora. Optional: for a longer, lighter version serve over fresh ice in a rocks glass topped with a splash of soda (about 1–2 oz) and a large ice cube.
