Prepare oven and pans

Preheat the oven to 350°F (175°C). Grease and line the bottom of two 8-inch round cake pans with parchment paper; grease the paper as well.

Combine dry ingredients

In a large bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt. Whisk in the granulated sugar until evenly distributed.

Combine wet ingredients

In a separate bowl, whisk the eggs, whole milk, vegetable oil, and vanilla extract until smooth.

Make batter

Add the wet mixture to the dry ingredients and stir until just combined. Slowly pour in the hot water, mixing gently until the batter is smooth and slightly fluid. The hot water blooms the cocoa and thins the batter—this is expected.

Bake

Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs but not wet batter.

Cool

Allow cakes to cool in the pans for 10 minutes. Run a knife around the edges, invert onto a cooling rack, peel off parchment, then let cool completely before assembling (about 1 hour).

Chocolate Ganache Filling

Heat cream

Place the finely chopped bittersweet chocolate in a heatproof bowl. In a small saucepan, bring the heavy cream just to a simmer over medium heat — do not boil.

Make ganache

Pour the hot cream over the chopped chocolate. Let sit undisturbed for 2 minutes, then gently whisk from the center outward until smooth and glossy. Add the unsalted butter and light corn syrup and whisk until incorporated and shiny. If the ganache is too warm and thin, let it cool at room temperature until spreadable (15–25 minutes), stirring occasionally.

Chill (optional)

For a firmer filling, cover and chill the ganache for 30–60 minutes, stirring every 15 minutes, until it reaches a spreadable consistency similar to thick pudding.

Chocolate Glaze & Decoration

Prepare glaze

Place the chopped semisweet chocolate in a heatproof bowl. Heat the 1/2 cup heavy cream in a small saucepan until it just simmers. Pour the hot cream over the chocolate and let sit for 1–2 minutes. Stir until smooth, then whisk in the 1 tablespoon unsalted butter until glossy.

Assemble cake

Level the tops of the cooled cake layers with a serrated knife if needed. Place one layer on a serving plate or cake board. Spread two-thirds of the ganache filling evenly over that layer to form a generous center. Top with the second cake layer and press lightly to set.

Glaze cake

Pour the warm (but not hot) chocolate glaze over the top of the assembled cake, starting in the center and working outward so glaze runs down the sides. Use an offset spatula to smooth the top and encourage an even drape. If glaze sets too quickly, warm briefly over a water bath and pour again.

Decorate

While glaze is tacky, press dark chocolate curls or grated chocolate around the top edge or sides as desired. Lightly dust the center with cocoa powder for a refined finish.

Set

Chill the cake in the refrigerator for 20–30 minutes to let the glaze and ganache firm up slightly before slicing. Remove from fridge 10 minutes before serving for easiest slicing.
