Toast and spread
Lightly toast the 2 slices of sourdough until just golden and crisp at the edges (about 2–3 minutes). While warm, evenly spread 1 1/2 tablespoons of sun-dried tomato cream cheese on each slice (total 3 tbs).
Tuna salad
Mix
Add 2 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 2 teaspoons finely diced red onion, 2 tablespoons finely diced celery, and 1 teaspoon fresh lemon juice to the tuna. Stir gently to combine.
Season
Season the tuna mixture with 1 teaspoon salt and 1/2 teaspoon black pepper. Taste and adjust — you can add up to 1/2 teaspoon more lemon or 1/4 teaspoon more salt if needed.
Toppings
Prepare vegetables
Rinse and spin-dry the arugula. Slice the sweet drop peppers into thin strips and have 3 pickle slices ready.
Assemble base
Take one slice of the sourdough (with cream cheese). Pile about 1 cup of arugula on top of the cream cheese, then spoon the prepared tuna salad (use all of it) evenly over the arugula.
Add toppings
Arrange the soft-boiled egg halves (cut side up) on the tuna, place the 3 pickle slices and scatter the sliced sweet drop peppers over the top. Sprinkle 1 teaspoon mixed seeds evenly over the toppings.
Finishing
Finish sandwich
Drizzle up to 1/2 teaspoon extra-virgin olive oil over the assembled toppings (optional) and finish with 1/4 teaspoon freshly ground black pepper. Place the second slice of sourdough, cream-cheese side down, on top and press gently.
Serve
Slice the sandwich in half on a bias and serve immediately. If making ahead, keep toppings chilled and assemble just before serving to preserve texture.
