Prepare mushrooms

Trim and slice mushrooms into fairly even pieces (approx. 1/4-inch). Pat dry if necessary to avoid excess moisture.

Heat a large nonstick or stainless-steel skillet over medium-high heat. Add 1 tbsp olive oil and 2 tbsp unsalted butter; swirl until butter foams and just begins to brown (about 1–2 minutes).

Add the sliced mushrooms in a single layer (work in batches if needed). Let them sear without stirring for 2 minutes to develop color, then stir and continue cooking until deeply golden and most moisture has evaporated, about 4–6 more minutes.

Add the minced shallot and garlic to the pan and cook 1–2 minutes until softened and fragrant, stirring so garlic doesn't burn.

Stir in fresh thyme, 1 tsp sea salt, and 1 tsp freshly ground black pepper. Taste and adjust seasoning. Remove mushrooms from the pan to a warm plate and set aside; keep pan warm but wipe excess oil if pan looks too greasy.

Eggs & Dairy

Crack 6 large eggs into a medium mixing bowl. Add 3 tbsp whole milk or light cream and 1 tsp fine sea salt. Whisk gently until yolks and whites are combined but not frothy — you want a uniform pale yellow mixture.

Return the skillet to low–medium-low heat. Add 1 tbsp unsalted butter and let it melt slowly until foaming and slightly glossy but not browning.

Pour the beaten eggs into the skillet. Let them sit undisturbed for 10–15 seconds to start setting around the edges.

Using a heatproof spatula, gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue this slow folding motion in 15–20 second intervals to create large, soft curds. Keep the heat low so the eggs remain custardy — total cooking time about 3–4 minutes.

When eggs are mostly set but still slightly glossy and creamy, fold in the cooked mushrooms and any accumulated juices. Stir gently to combine so the mushrooms are evenly distributed.

Off the heat, stir in 2 tbsp grated Parmesan and adjust seasoning if needed. The residual heat will finish the eggs without overcooking them.

Truffle & Finish

Drizzle 1 tsp truffle oil over the scramble and fold gently to distribute the aroma. Taste and add flaky salt (about 1/4 tsp) if desired.

Plate the scramble onto warm serving plates. Garnish with 1 tbsp chopped chives and scatter 1/2 cup microgreens or baby arugula if using.

Serve immediately while warm and aromatic alongside toasted sourdough or brioche, and offer extra truffle oil at the table for guests who want more intensity.
