Prep potatoes
Peel the russet potatoes and grate them on the large holes of a box grater (or pulse in a food processor with the coarse shredding disk) until you have about 2 cups shredded potato. Place shredded potatoes into a large bowl of cold water and swish to remove surface starch; drain and repeat once more until water runs clearer.
Dry thoroughly
Place the drained shredded potatoes in a clean kitchen towel or several layers of paper towels. Twist and squeeze firmly to remove as much moisture as possible (important for crispness). Transfer the dried shredded potato to a mixing bowl and measure approximately 2 packed cups.
Add aromatics & binder
Finely grate or mince half a medium yellow onion to equal about 1/2 cup. Add the onion to the bowl with potatoes. Lightly beat 1 egg and add it to the bowl, then add 2 tablespoons all-purpose flour. Toss to combine—the egg and flour will help bind the potatoes into cohesive cakes.
Seasoning
Add 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper, 1/2 teaspoon smoked paprika, and 1/2 teaspoon garlic powder to the potato-onion mixture. Stir or mix gently until seasoning is evenly distributed. Taste a small pinch (cook a tiny piece in a skillet if desired) and adjust salt and pepper to preference.
Frying & Finish
Form cakes
Divide the potato mixture into 4 equal portions (for 4 medium patties) or 6 for smaller cakes. With slightly oiled hands, shape each portion into a compact patty about 3 to 3.5 inches in diameter and roughly 1/2 inch thick. Press firmly so they hold together.
Heat pan
Place a large skillet (cast-iron preferred) over medium heat. Add 2 tablespoons neutral oil and 2 tablespoons unsalted butter. Allow butter to melt and foam but not burn; the combination gives flavor and a higher smoke point.
Fry hash browns
Carefully add patties to the skillet, leaving space between them (work in batches if needed). Cook without moving until deep golden brown and crisp on the bottom, about 4–5 minutes. Flip gently with a thin spatula and cook the second side until equally golden and cooked through, another 4–5 minutes. If the pan darkens too quickly, lower heat to medium-low. Add a teaspoon or two of additional oil if pan becomes dry.
Finish and keep warm
Transfer finished hash browns to a baking sheet set in a warm oven (200°F / 95°C) while you finish remaining patties so they stay crisp and warm. For extra richness, spoon a little melted butter over each before serving and squeeze a lemon wedge lightly if using.
Serve
Plate 1–2 hash browns per person, top with a dollop of sour cream or crème fraîche if desired, sprinkle with extra chopped chives and microgreens. Serve immediately.
Optional Garnishes
If using sour cream or crème fraîche, season a small bowl with a pinch of salt and a little lemon zest for brightness and serve alongside. Scatter microgreens lightly over the plated hash browns for color and a fresh bite.
