Waffle Batter

Preheat your waffle iron according to manufacturer's instructions. In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.

In a separate bowl or large measuring cup, whisk the eggs, milk, melted butter, and vanilla until smooth.

Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined. Do not overmix — a few small lumps are fine. Let the batter rest 5–10 minutes while the waffle iron finishes heating.

Brush or spray the waffle iron with vegetable oil. Add batter according to your waffle iron's size (about 1/2 to 3/4 cup per waffle for a standard iron). Close and cook until deep golden and crisp, about 4–6 minutes, depending on your iron. Transfer cooked waffles to a wire rack in a warm oven (about 200°F / 95°C) to stay crisp while you finish remaining components.

Meringue Cream (Swiss-style stabilized meringue cream)

Cook egg whites and sugar

Combine the egg whites and granulated sugar in a heatproof bowl (glass or metal). Set the bowl over a saucepan of gently simmering water (double boiler), making sure the bowl doesn't touch the water. Whisk constantly until the sugar dissolves and the mixture reaches 160°F (71°C) or feels warm and no longer grainy when rubbed between fingers, about 3–5 minutes.

Whip to stiff peaks

Transfer the hot egg-white mixture to the bowl of a stand mixer fitted with the whisk attachment (or use a hand mixer). Whip on high speed until glossy, stable, and cooled to room temperature, forming stiff peaks, about 6–8 minutes.

Finish with butter

With the mixer on medium, add the softened butter a tablespoon at a time, letting each addition incorporate fully before adding the next. Once all butter is added, mix in the vanilla and a pinch of salt. Continue whipping until smooth and spreadable. If the cream looks curdled, keep whipping — it will come together as it reaches room temperature.

Prepare berries

Rinse and gently pat the mixed berries dry. If using strawberries, hull and quarter larger berries so all pieces are bite-sized.

Caramelize banana

Slice the banana on the diagonal into 1/2-inch thick pieces. Heat a nonstick skillet over medium heat and add 1 tablespoon unsalted butter. When the butter foams, sprinkle in 1 tablespoon brown sugar and stir until it begins to melt and caramelize, about 30 seconds. Add the banana slices in a single layer and cook 1–2 minutes per side until golden and caramelized. Remove from the pan and keep warm.

Warm dulce de leche (optional)

If desired, gently warm the dulce de leche in a small saucepan over low heat or microwave in short bursts (10–15 seconds), stirring between bursts, until pourable. Do not boil.

Crunch & Garnish

Roughly chop the pistachios if not already chopped. Measure the granola crumble. Keep both at room temperature until ready to assemble.

Toast pistachios (optional)

For extra flavor, toast pistachios in a dry skillet over medium heat, shaking the pan, until fragrant — about 2–3 minutes. Let cool before chopping.

Assembly

Place one warm waffle on a serving plate. Spoon or pipe a generous dollop (about 3–4 tablespoons) of the meringue cream onto the waffle, spreading slightly but keeping some height.

Arrange a handful of mixed berries and 3–4 caramelized banana slices on top of the cream.

Drizzle about 2 tablespoons of warmed dulce de leche over the fruit and cream in a decorative pattern.

Sprinkle 1–2 tablespoons granola crumble and 1–2 tablespoons chopped pistachios over the top for crunch.

If desired, dust lightly with powdered sugar. Serve immediately so the waffle remains crisp and the meringue cream stays stable.
