Prepare the Potatoes

Peel and slice the potatoes into thin layers. Rinse and pat dry.

Make Potato Pave

Layer the potato slices in a baking dish, adding salt, pepper, and a bit of butter between layers. Bake at 180°C (350°F) for about 30 minutes until golden and tender.

Sauté the Vegetables

In a pan, heat a tablespoon of butter and sauté the broccoli florets and sliced heirloom carrots until tender, about 5-7 minutes. Season with salt, pepper, and fresh thyme.

Cook the Wagyu

Season the A5 Wagyu steaks with salt and pepper. In a hot skillet, add a tablespoon of truffle oil and sear the steaks for 2-3 minutes on each side for medium-rare. Let rest for a few minutes.

Plating

Slice the potato pave and arrange on a plate. Top with the sautéed vegetables and slice the Wagyu steak to serve on the side. Drizzle with additional truffle oil if desired.
