Method

Syrup (Firewater Syrup)

    Make the infused syrup

    Combine 0.5 cups granulated sugar and 0.5 cups water in a small saucepan over medium heat. Stir until the sugar fully dissolves and the syrup just comes to a simmer.

    Add the sliced red chili (seeds in for more heat, seeds removed for milder) and the sliced fresh ginger to the syrup. Reduce heat to low and gently simmer for 5 minutes to extract heat and flavor.

    Remove from heat and add the flamed orange peel to the pan (hold an orange peel over a lighter so oils flame briefly, then drop peel into the hot syrup) to intensify the citrus aroma. Let steep for 20–30 minutes off the heat, tasting at intervals to reach desired heat level.

    Strain the syrup through a fine mesh sieve into a clean jar, pressing solids to extract flavor. Cool to room temperature, then refrigerate. The syrup will keep for up to 2 weeks chilled.

Cocktail

    If using egg white: dry shake (no ice) the egg white in a cocktail shaker for 10–15 seconds to emulsify.

    Add 2 oz reposado tequila, 0.75 oz fresh lime juice, 0.5 oz Cointreau, 0.5 oz Firewater syrup, 0.25 oz ginger liqueur and 2 dashes bitters to the shaker. Add 1 cup of ice.

    Shake vigorously for 12–15 seconds (if egg white was used, shake first without ice then with ice) until the shaker is well chilled and slightly frosted.

    Double strain into a chilled coupe or rocks glass (over fresh large ice if preferred). Double straining removes small chili and ginger particles and yields a cleaner texture.

    Garnish with a thin chili wheel perched on the rim and a small lime wheel. Optionally express a lime peel or torch a thin orange peel over the drink for added aroma.

    Serve immediately. Warn guests the syrup carries spicy heat; adjust future pours by reducing syrup if desired.

    If you prefer less spice, make the syrup with seeds removed or steep the chili for less time. For more smokiness, substitute mezcal for part or all of the tequila (start with 0.5 oz swap).
