    Prepare must and ferment

    If starting from fresh apple juice: measure specific gravity with a hydrometer. If necessary, dissolve sugar into juice (2000 g sugar per 10 L will raise potential ABV significantly; adjust according to target). Pitch wine/cider yeast (approx. 5 tsp for 10 L) into juice in a sanitized fermentation vessel. Fit an airlock and ferment in a cool, dark place at 15–22°C (59–72°F) until fermentation is complete and gravity is stable (typically 1–3 weeks for cider; may take longer with high sugar). If starting from commercially produced hard cider, skip sugar addition and pitching yeast unless re-fermentation is desired; still confirm fermentation is complete.

    Bench and prepare for distillation

    Once fermentation is complete and the lees have settled, rack (siphon) the fermented cider off the gross lees into a clean container to reduce solids. Allow short clearing (24–48 hours) so solids do not carry into the still. Measure ABV with hydrometer to estimate expected distillate strength.

    Ensure distillation is legal where you live; many jurisdictions require permits. Distillation described here is general: transfer racked cider to the still, heat slowly. Perform a slow run: make a spirit run (first strip run if using a pot still) to concentrate alcohol. Monitor temperature and collect hearts separately from foreshots and feints.

    Making the heart cut

    Discard foreshots (first ~1–2% of the total pure alcohol; contains methanol and volatile compounds). Collect heads separately until the temperature and sensory indicators show cleaner ethanol character, then collect the heart fraction (the desired potable ethanol containing apple aromatic compounds). Stop collecting the heart when harsher fusel notes begin to appear (tails). Optionally perform a second, slower distillation (spirit run) to refine the heart and reach desired purity and flavor.

    Aging in oak

    Transfer the distilled apple eau-de-vie (the heart cuts) into a small oak barrel or into neutral containers with measured oak chips (medium toast) to impart color and aroma. Traditional Calvados is aged in French oak; age for a minimum of 2 years to develop character, though many styles are aged longer (4+ years for XO-quality). Store barrel/demijohn in a cool, dark place with moderate cellar humidity and temperature (10–15°C/50–59°F) to allow slow maturation and micro-oxidation.

    Blending and proofing

    After the desired aging period, sample and, if necessary, blend different casks or lots to achieve balance. Proof down with demineralized water to a bottling strength (typical Calvados bottles are around 40% ABV). Use the measured starting ABV to calculate how much water is needed; add water slowly and rest the spirit for a few days to marry flavors before bottling.

    Bottling

    Filter gently if needed to remove any particulate. Bottle in clean, sterilized bottles and seal. Label with age and batch information. Store bottles upright out of direct sunlight.
