    Prepare the meat

    Trim excess fat and silver skin from the alligator meat. Cut into 1 to 1.5-inch medallions or strips for even cooking.

    Marinate

    Place the cut alligator pieces in a shallow container and pour the buttermilk marinade (buttermilk, apple cider vinegar, Worcestershire, hot sauce). Cover and refrigerate for 2 to 6 hours to tenderize and add flavor. If short on time, 30 minutes will still help.

    Season before cooking

    Remove meat from the marinade and pat lightly dry with paper towels. In a small bowl combine kosher salt, black pepper, paprika, garlic powder, onion powder, and cayenne. Rub the spice mix evenly over the alligator pieces and let rest at room temperature for 10–15 minutes while you heat the pan.

    Sear

    Heat a heavy skillet (cast iron preferred) over medium-high heat until very hot. Add olive oil and swirl to coat. Add the alligator pieces in a single layer without crowding. Sear undisturbed 2–3 minutes per side until golden-brown and just cooked through (internal temperature around 145–150°F / 63–66°C). Smaller pieces may take less time; take care not to overcook or the meat will become tough.

    Carryover and rest

    Transfer cooked pieces to a warm plate and tent loosely with foil. Rest 5 minutes to allow juices to redistribute.

Herb butter & finishing

    While the meat rests, reduce heat to low and add the unsalted butter to the still-warm skillet. Add minced garlic and cook gently 20–30 seconds until fragrant (do not brown). Stir in chopped parsley and lemon juice, scraping browned bits from the pan to make a quick pan sauce.

    Return the rested alligator pieces to the skillet and toss briefly in the herb butter to glaze, about 30–45 seconds. Spoon sauce over the pieces before serving.

Accompaniments (suggested)

    Prepare creamy grits or mashed potatoes according to package or your favorite recipe and keep warm. Sauté or steam green vegetables and season simply with salt, pepper, and a splash of lemon.

    Serve the glazed alligator medallions over grits or mashed potatoes, with greens on the side and lemon wedges for squeezing. Offer additional hot sauce at the table if desired.
