Pickle the Cucumber
In a bowl, mix rice vinegar, sugar, salt, and thinly sliced cucumber. Let it sit for at least 30 minutes.

Prepare the Sriracha Aioli
In a small bowl, combine mayonnaise, sriracha sauce, and soy sauce. Mix well and set aside.

Crust the Tuna
Season tuna steaks with salt and black pepper. Press sesame seeds into both sides of the tuna steaks.

Sear the Tuna
Heat a non-stick skillet over medium-high heat. Sear the tuna for about 1-2 minutes on each side for medium-rare, or longer if desired.

Slice the Avocado
Cut the avocado in half, remove the pit, and slice into thin wedges.

Plating
Place the seared tuna on a plate, add avocado slices, and top with pickled cucumber. Drizzle with sriracha aioli and garnish with chopped green onions.
