    Prepare the Ingredients

    Slice the onions into thin rings and chop the applewood bacon into small pieces.

    Cook the Bacon

    In a large skillet over medium heat, add the applewood smoked bacon. Cook until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the drippings in the pan.

    Caramelize the Onions

    Add olive oil and butter to the skillet with the bacon drippings. Add the sliced onions and salt. Cook on low heat, stirring occasionally, until onions are golden brown and caramelized, about 20-25 minutes.

    Add Flavor

    Once the onions are caramelized, add balsamic vinegar, black pepper, and fresh thyme. Stir well to combine and cook for an additional 3-5 minutes.

    Combine Ingredients

    Stir in the cooked bacon and mix well. Remove from heat.

    Serve with Cheese

    Grate or slice the porter cheddar cheese and serve it on top of the caramelized onions and bacon mixture. Enjoy warm!
