    Caramelize the Onions

    In a large skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 20-25 minutes. Season with salt and pepper.

    Cook the Bacon

    In another skillet, cook the applewood smoked bacon over medium heat until crispy. Remove from the skillet and drain on paper towels.

    Prepare the Balsamic Reduction

    In a small saucepan, bring balsamic vinegar to a boil. Reduce heat and let simmer until it thickens and reduces by half, about 10-15 minutes.

    Assemble the Dish

    On a plate, layer the caramelized onions, arugula, and crispy bacon. Top with warm gruyere cheese. Drizzle with balsamic reduction.
