    Caramelize the Onions

    Heat olive oil in a skillet over medium heat. Add sliced onions and sauté until they are soft and golden brown, about 15-20 minutes. Stir occasionally to prevent burning. Season with salt and pepper.

    Prepare the Au Jus

    In a saucepan, heat the beef broth over medium heat. Allow it to simmer gently while you prepare the sandwiches.

    Toast the Buns

    Spread butter on the outside of each bun and place them in a skillet over medium heat. Toast until golden brown and crispy, about 3-5 minutes.

    Assemble the Sandwiches

    Place a generous amount of caramelized onions on the bottom half of each toasted bun. Sprinkle Gruyere cheese over the onions. Top with the other half of the bun.

    Melt the Cheese

    Return the sandwiches to the skillet and cover with a lid to help melt the cheese, about 2-3 minutes.

    Serve

    Serve the sandwiches with a side of warm au jus for dipping.
