Marinate the Chicken
In a large bowl, combine the buttermilk, garlic powder, onion powder, and salt. Add the chicken thighs and ensure they are fully coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Prepare the Dredging Station
In a separate bowl, mix the all-purpose flour and cayenne pepper together. Set aside.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dredge the Chicken
Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the flour mixture, making sure to coat thoroughly.

Fry the Chicken
Carefully place the coated chicken thighs in the hot oil. Fry for about 6-8 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Remove the chicken from the oil and let it drain on a wire rack or paper towels. Serve hot with pickles and your favorite DDD sauce.
