Make the meatball mixture

In a large bowl combine breadcrumbs and 1/4 cup milk; let sit 5 minutes until soaked. Add ground beef, ground pork, egg, grated Parmesan, chopped parsley, minced garlic, grated onion, dried oregano, salt, and black pepper. Gently mix with your hands or a fork until just combined; avoid overworking to keep meatballs tender.

Shape meatballs

Portion mixture into 1 1/4 to 1 1/2-inch meatballs (makes about 18–22 meatballs depending on size). Roll each between your palms to form smooth balls and place on a tray or baking sheet.

Sear meatballs

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. When hot, add meatballs in a single layer without crowding; you may need two batches. Brown on all sides, about 2–3 minutes per side, using tongs to turn. They do not need to be fully cooked through—just nicely browned. Transfer browned meatballs to a plate and wipe out excess oil, leaving fond in the pan.

Marinara Sauce

Cook aromatics

In the same skillet over medium heat add 1 tablespoon olive oil. Add sliced garlic and minced shallot; cook 1–2 minutes until fragrant and translucent but not browned.

Build the sauce

Stir in tomato paste and cook 30 seconds. Add crushed tomatoes (use about 1 cup for this quantity), dried basil, dried oregano, red pepper flakes, salt, pepper, and sugar. Stir to combine and bring to a gentle simmer.

Simmer with meatballs

Return the browned meatballs to the skillet, nestling them into the simmering marinara. Reduce heat to low, cover partially, and simmer gently 20–25 minutes until meatballs are cooked through (internal temp 160–165°F / 71–74°C) and sauce has thickened. Taste and adjust seasoning. Stir in torn fresh basil at the end if using.

Alfredo Sauce

Make a roux

While marinara simmers (or in a separate pan), melt 4 tablespoons butter in a medium saucepan over medium heat. Add minced garlic and sauté 30 seconds until fragrant. Sprinkle in 2 tablespoons flour and whisk constantly 1 minute to form a blond roux.

Add liquids and cheese

Slowly whisk in 1 cup whole milk and 1/2 cup heavy cream, smoothing lumps. Bring to a gentle simmer, whisking frequently, until the sauce thickens slightly, 3–5 minutes. Remove from heat and whisk in 3/4 cup grated Parmesan until melted and smooth. Season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and a pinch (1/8 tsp) nutmeg if using. If sauce is too thick, thin with a tablespoon or two of milk.

Keep warm

Keep the Alfredo warm over very low heat or in a double boiler; whisk occasionally. If it sits, whisk again before serving to restore silkiness.

Cook pasta according to package directions in salted boiling water until al dente. Reserve 1/2 cup pasta cooking water, then drain pasta.

To serve the 'Meatball Trio' present three components: marinara meatballs, plain meatballs with Alfredo, and meatballs where you can combine both sauces. Plate a portion of pasta and spoon marinara and 3–4 meatballs over one portion. For Alfredo, toss a portion of pasta with 2–3 tablespoons Alfredo sauce, place 3–4 meatballs on top, and spoon additional sauce over them. Optionally offer a small bowl of combined marinara + Alfredo (pink sauce) for a third style—mix equal parts warmed marinara and Alfredo and heat gently, then add meatballs.

Garnish each plate with chopped parsley or basil and extra grated Parmesan. Serve immediately.
