Prepare cucumbers

Wash the cucumbers thoroughly. Trim the blossom ends (about 1/8 inch) to reduce softening, then slice into spears or 1/4-inch rounds depending on preference. Pack the cut cucumbers tightly into the sterilized 8 oz jar leaving about 1/2 inch headspace.

Add aromatics

Nestle the dill sprigs into the jar with the cucumbers. Add the smashed garlic cloves, black peppercorns, mustard seeds (if using), red pepper flakes (if using), and bay leaf (if using) between the cucumber pieces so flavors distribute evenly.

Make brine

In a small saucepan combine 1 cup water, 1/2 cup white vinegar, 1 tablespoon kosher salt, and 1 teaspoon sugar. Heat over medium until the salt and sugar dissolve and the liquid just comes to a simmer; do not boil aggressively. Remove from heat and let cool for 2 minutes.

Pour brine and seal

Carefully pour the hot brine into the jar over the cucumbers, leaving ~1/4 inch headspace. Tap the jar gently to release trapped air bubbles; add more brine if necessary to cover cucumbers fully. Wipe the rim, place the lid on, and screw band finger-tight.

Rest and chill

Let the jar cool to room temperature for 30–45 minutes. Then refrigerate. For best flavor, wait at least 24 hours before eating; crunchy texture will be optimal within 2–7 days. These quick pickles will keep in the refrigerator for up to 4 weeks.

Serve chilled as a snack, sandwich topping, or side. Use a clean utensil each time to avoid contamination and extend shelf life.
