Sprinkle the flour over the mushroom mixture and stir to coat. Cook for 1–2 minutes to remove the raw flour taste while stirring continuously.
Deglaze the pot with the white wine (or 1/2 cup extra stock). Scrape up any browned bits from the bottom of the pot. Let the wine simmer and reduce by half, about 1–2 minutes.
Add the stock and bay leaf, stir to combine. Bring to a gentle simmer, reduce heat to maintain a low simmer, and cook for 15–20 minutes to meld flavors.
Remove the bay leaf. Use an immersion blender to partially or fully purée the soup to your desired texture (leave some mushroom pieces for body), or transfer in batches to a blender and purée, then return to pot.
Finish & Adjust
Stir in the heavy cream and sour cream or crème fraîche (if using). Warm gently over low heat—do not boil after adding dairy. Taste and adjust seasoning with salt and freshly ground black pepper.
If soup is too thick, thin with additional stock or water, 1–2 tablespoons at a time, until desired consistency is reached. If it needs brightness, stir in the optional lemon juice.
