    Chill glass

    Place a tall rocks glass or small clay cantarito (if available) in the freezer for 5–10 minutes or fill with ice water to chill while you prepare the cocktail.

    Prepare rim

    Rub a grapefruit wedge around the glass rim, then dip rim into a shallow plate of coarse salt or Tajín to coat. Set glass aside.

Mixing the cocktail

    Combine base ingredients

    In a cocktail shaker, add 2 oz Jose Cuervo Tradicional Silver, 2 oz fresh grapefruit juice, 0.5 oz fresh lime juice, 0.5 oz hibiscus syrup, and 0.25 oz agave nectar (if using).

    Add ice and shake

    Fill the shaker with ice (about 1 cup) and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

    Strain and top

    Discard chilling ice/water from the prepared glass. Strain the shaken mixture into the rimmed glass over fresh ice (big cubes or crushed, about 3/4 full). Top with 2 oz chilled sparkling grapefruit soda, gently stir once with a bar spoon to combine.

    Garnish the drink with a grapefruit wheel or wedge on the rim and an edible hibiscus flower or mint sprig for aroma. Serve immediately with a straw or stirrer.
