Prepare glass and ice
If using a large ice cube mold, freeze ahead so you have one clear large cube. Place one large ice cube into an old fashioned glass. If you prefer smaller or crushed ice, adjust to fill glass leaving room for stirring.

Stir to chill and dilute
Using a mixing spoon, stir the mixture gently around the ice for 20–30 seconds (about 15–20 revolutions) until the drink is well chilled and slightly diluted. If you mixed in a separate mixing glass, strain over the prepared large ice cube in the serving glass.

Aromatics and finishing
Express the oils from a wide strip of orange peel over the drink by holding it skin-side down about 2–3 inches above the glass and giving a quick squeeze to release the oils, then rub the rim with the peel and drop it into the drink. If desired, lightly sprinkle a tiny pinch (~0.1 tsp) of smoked sea salt on top for an added smoky note, or flame the expressed orange peel briefly (careful — hold a lighter flame near the peel while expressing) to caramelize the zest for extra aroma.

Serve
Serve immediately while cold. The finished Jalisco Old Fashioned should be rich, smooth with chocolate and orange bitters rounding the agave-forward añejo tequila and a touch of warm spice from the bitters and optional smoked salt.

Use a single old fashioned glass per serving. If making multiple cocktails, use a mixing glass and strain into chilled rocks glasses with ice cubes.
