    Sweat vegetables

    In a heavy-bottomed pot over medium heat, melt 2 tbs of the butter. Add the diced onion, celery, and carrot. Cook, stirring occasionally, until softened and translucent, about 6–8 minutes. Add the minced garlic and cook 30 seconds until fragrant.

    Make roux

    Push the vegetables to the side, add remaining 2 tbs butter to the cleared space, and sprinkle the flour over the butter and vegetables. Stir constantly for 1–2 minutes to cook the flour without browning (this creates a light roux).

Liquids & Broth

    Deglaze and add stock

    Raise heat to medium-high and pour in the dry white wine to deglaze, scraping any browned bits from the bottom. Let the wine reduce by half, about 2–3 minutes. Slowly whisk in the chicken or fish stock until smooth and combined with the roux and vegetables.

    Simmer

    Bring the mixture to a gentle simmer. Reduce heat to maintain a low simmer and cook for 10 minutes to meld flavors and thicken slightly.

Cream & Finish

    Add dairy

    Lower heat to low. Stir in the heavy cream and whole milk, mixing until the soup is uniform. Warm gently — do not boil after adding dairy — and simmer on low for 5 minutes to heat through.

    Incorporate roe and seasoning

    Stir in the crab roe (or crab paste) until evenly dispersed; this will enrich flavor and color. Add Old Bay, salt, and black pepper. Taste and adjust seasoning as needed.

Seafood & Final Steps

    Add crabmeat

    Gently fold in the lump crabmeat, being careful to keep some larger pieces intact for texture. Heat through on the lowest heat for 3–4 minutes — again, avoid boiling so the crab remains tender.

    Finish with sherry and lemon

    Remove the pot from the heat. Stir in the dry sherry and lemon juice. Let rest 2 minutes so flavors settle.

    Garnish and serve

    Ladle the she-crab soup into warmed bowls, sprinkle with sliced chives or parsley and additional roe if desired. Serve immediately with crusty bread or dinner rolls on the side.
