    Mix dry ingredients

    In a medium bowl, whisk together the all-purpose flour (3 tbs), baking powder (1 tsp), granulated sugar (1 tsp), and a pinch of salt until evenly combined.

    Combine wet ingredients

    In a separate small bowl or measuring cup, beat the egg lightly, then stir in the milk (3 tbsp) and the melted butter (1 tsp) until blended.

    Make batter

    Pour the wet mixture into the dry ingredients and stir gently until just combined. Small lumps are fine — do not overmix. Let the batter rest for 5 minutes to allow the baking powder to activate and the batter to thicken slightly.

Cooking and optional sides

    Preheat pan

    Place a nonstick skillet or griddle over medium heat and add 1 tsp of vegetable oil or a small pat of butter. Heat until the surface is shimmering but not smoking (about 2–3 minutes).

    Cook pancakes

    For each pancake, pour about 1/3 cup of batter into the hot skillet, leaving space between them. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook the second side until golden brown, about 1–2 minutes more. Repeat with remaining batter to make a total of two pancakes. Keep cooked pancakes warm on a plate tented with foil or in a low oven (about 90–100°C / 200°F).

    Prepare choice: bacon

    If serving with bacon, cook 2 strips of bacon in a skillet over medium heat until crisp, 6–8 minutes, turning as needed. Drain on paper towels and keep warm.

    Prepare choice: sausage

    If serving with breakfast sausage links, brown 2 links in a skillet over medium heat, turning occasionally, until cooked through (internal temperature 71°C / 160°F), about 8–10 minutes. Drain any excess fat and keep warm.

    Prepare choice: fresh fruit

    If serving with fresh fruit, rinse and drain 1 cup mixed fruit (berries) or slice banana/apple. Pat dry and arrange on a small bowl or on the plate alongside the pancakes.

To serve

    Stack the two pancakes on a plate, top with 1 tsp unsalted butter if desired, drizzle with 2 tbsp maple syrup and dust with 1 tsp powdered sugar if using. Arrange chosen side (bacon, sausage or fresh fruit) next to the pancakes and serve immediately.
