Noodles & Sauce
Cook the noodles
Bring a large pot of salted water to a rolling boil. Add the egg noodles and cook according to package directions until just al dente (usually 3–5 minutes for fresh, 5–8 for dried). Drain thoroughly and immediately toss with 1 tablespoon vegetable oil to prevent sticking. Set aside.
Mix the sauce
In a bowl, whisk together soy sauce, oyster sauce, dark soy (if using), sesame oil, sugar, and white pepper until sugar dissolves. Taste and adjust balance — should be savory with a hint of sweetness. Reserve until needed.

If using protein: while aromatics heat, toss the thinly sliced chicken with cornstarch, salt, and pepper. Add the chicken to the center of the hot wok and stir-fry 2–3 minutes until mostly cooked through and beginning to brown. Then mix with the vegetables so everything is combined.
Combine & Finish
Add the tossed, cooked noodles to the wok in a single layer if possible. Pour the prepared sauce evenly over the noodles. Using tongs or two spatulas, gently but quickly toss and toss-and-turn the noodles, lifting and folding them so sauce coats everything. Continue stir-frying 1–2 minutes until noodles are heated through, the sauce has been absorbed, and edges of some noodles start to char slightly.
Add bean sprouts and scallions in the last 30 seconds and toss once more to combine — this preserves their crunch and bright flavor.
Taste and adjust seasoning: add more soy sauce for salt, a pinch of sugar for balance, or the optional chili paste for heat. Finish with a drizzle of sesame oil for perfume.
Finishing & Serve
Transfer the fried noodles to a platter or individual bowls. Sprinkle with toasted sesame seeds and serve with lime wedges on the side. Offer extra chili paste at the table if desired.
