Boil Noodles
Bring 6 cups of water to a rolling boil in a medium saucepan. Add the instant noodle cake and cook uncovered for 2 to 3 minutes, stirring gently to separate strands until just tender but still slightly firm (al dente).
Reserve 3 tablespoons of the hot cooking water, then drain the noodles thoroughly in a colander. Return the drained noodles to the pan off the heat.
Add 1 tablespoon cooking oil to the hot noodles and toss gently to coat each strand to prevent sticking and create a glossy base for the dry sauce.
Sauce & Seasoning
Make Dry Sauce
In a small bowl combine the instant soup/seasoning powder from the noodle pack with 1 tsp soy sauce, 1 tsp sesame oil, 1 tsp brown sugar (or honey), 1 tsp chili paste (adjust to heat preference), and 1 tsp black pepper. Stir until the sugar dissolves and the seasoning powder is evenly distributed.
Gradually add the reserved 3 tablespoons hot noodle water to the sauce mixture and whisk to form a slightly thick, glossy paste. The small amount of water helps the dry seasoning cling to the noodles without making them soupy.
Toppings (optional)
Plate the coated dry noodles, top with the fried egg, scatter sliced scallions, sprinkle toasted sesame seeds and crushed toasted seaweed. Serve immediately so the noodles remain dry and glossy rather than soupy.
