Prep ingredients
Cook bacon until crisp (pan-fry over medium heat 6–8 minutes, turning once). Drain on paper towels. If turkey/ham aren't pre-cooked, cook until safe and cooled, then slice thinly. Wash and dry lettuce leaves. Slice the tomato into 4–6 thin slices. If using cheese, have slices ready. Soften butter if using.
Make spread
In a small bowl mix mayonnaise and Dijon mustard until smooth. Season with a pinch of salt and a little black pepper (reserve most pepper for the sandwiches).
Assemble sandwiches
Layer first deck
Place one slice of toasted bread, toasted side up if toasted. Spread about 1 tablespoon of the mayo-mustard mixture evenly over the bread. Arrange a layer of turkey (about half of the turkey), then a leaf or two of lettuce, and 1–2 tomato slices. Season tomato lightly with a pinch of salt and some freshly ground black pepper (about 1/4 tsp).
Middle slice
Place a second slice of toasted bread on top of the first deck, spread 1 tablespoon mayo-mustard on the top of that slice. Add the ham slices and cheese (if using), then two strips of cooked bacon.
Top deck
Top with the third slice of bread, spread remaining mayo-mustard (about 1 tablespoon) on the top. Press down gently to compact layers evenly.
Secure and cut
Insert wooden cocktail picks through the sandwich, one near each corner (or two through the sandwich if making two halves). Using a sharp knife, trim off the crusts if desired, then cut the sandwich diagonally into quarters. If making multiple sandwiches (using 6 slices per sandwich), repeat assembly for each sandwich; this recipe yields two club sandwiches.
Serve
Arrange quartered sandwiches on a plate with a pickle spear beside each quarter or each sandwich half. Serve immediately while bacon is warm and bread is slightly crisp. Adjust salt and pepper to taste. Enjoy.
