Inspect the bottle for any faults or sediment. If present, stand the bottle upright for a few hours beforehand. Using a corkscrew, carefully remove the cork in one smooth motion to avoid agitation of the wine.

Inspect and open

Ensure the Syrah is at the ideal serving temperature: about 16–18°C (60–65°F). If the bottle is colder, let it sit in the glass for 10–15 minutes; if warmer, chill in the fridge for 10–15 minutes. The wine should be cool but not cold to reveal its full aromatics.

Temperature check

If the wine is younger or you want to broaden the aromatics, decant for 30–60 minutes. Pour slowly into a decanter, leaving any sediment in the bottle. Decanting will soften tannins, integrate smoke and pepper notes, and open the dark fruit aromas.

Use a large-bowled red wine glass. Pour 4–6 ounces (120–180 ml) per serving, filling the bowl sufficiently to allow swirling and aeration without sloshing.

Hold the glass at an angle to examine the deep color and rim variation. Swirl gently to aerate and release aromas: expect dark ripe fruits, smoky notes and pepper. Inhale deeply, then take a small sip, letting the wine coat the palate to assess acidity, tannin, fruit intensity and the long, rich finish described.

Keep the water and plain crackers or bread available. Take a small sip of water and a bite of cracker between tastings to reset the palate and better appreciate nuanced flavors.

Cleanse palate between tastes

If serving grilled lamb chops: season chops with salt, cracked black pepper and a light olive oil rub. Grill over medium-high heat 3–4 minutes per side for medium-rare depending on thickness. Rest 5 minutes, then serve alongside the Syrah — the wine's pepper and smoke will complement the char and the dark fruit will balance the meat's richness.

For vegetarian option: slice eggplant, brush with olive oil, sprinkle smoked paprika and sea salt, then char on a hot grill or skillet until softened and slightly blackened (about 4–6 minutes per side). The smoky, savory notes play well with the Syrah's profile.

Serve 30–40 g of aged hard cheese per person. Taste a small piece of cheese, then a sip of wine; the wine's acidity and fruit will cut through the cheese's fat and highlight smoky/peppery elements.
