Prepare lettuce

Wash romaine leaves thoroughly under cold running water. Spin or pat dry until mostly moisture-free. Chop into bite-sized pieces and place in a large chilled mixing bowl.

Add cheese and croutons

Reserve about 1 tablespoon of grated Parmesan for garnish. Add remaining Parmesan (about 0.9 oz) and croutons to the bowl with chopped romaine. Do not toss yet — wait until dressing is added.

Finish and serve

When dressing is ready, pour dressing over the lettuce, Parmesan, and croutons. Toss gently but thoroughly with tongs until leaves are evenly coated and croutons are distributed. Taste and adjust with additional black pepper or a squeeze of lemon wedge if desired. Transfer to a serving plate or bowl and sprinkle the reserved Parmesan on top. Serve immediately.

Caesar dressing (creamy)

Combine base ingredients

In a medium bowl, add 3 tablespoons mayonnaise and 1 tablespoon Greek yogurt. Add the minced anchovy fillets (or 1 tsp anchovy paste) and the minced garlic. Whisk until smooth.

Season and emulsify

Stir in 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard, and 1 teaspoon Worcestershire sauce. While whisking constantly, slowly drizzle in 2 tablespoons extra-virgin olive oil to create a slightly thick, creamy emulsion.

Adjust seasoning

Season the dressing with 1 teaspoon freshly ground black pepper and 1/4 teaspoon salt. Taste and adjust: add more lemon juice for brightness, a pinch more salt for savory depth, or a touch more olive oil for silkiness. If dressing is too thick, whisk in 1–2 teaspoons of cold water to reach desired consistency.

Chill briefly (optional)

For the best melding of flavors, refrigerate the dressing for 10–15 minutes, then whisk again before tossing with the salad. If serving immediately, proceed to toss while dressing is fresh and cool.
