Make syrup
Combine 0.5 cups sugar and 0.5 cups water in a small saucepan. Add 0.5 tsp ground cinnamon (or one cinnamon stick). Bring to a gentle simmer over medium-low heat, stirring until the sugar dissolves. Simmer 2 minutes to infuse, then remove from heat. If you used a cinnamon stick, let steep 10 minutes more. Strain out solids if necessary. Cool to room temperature before using. Yields ~0.75–1 oz; store refrigerated up to 2 weeks.
Cocktail Preparation
Chill glass and add ice
Place a rocks glass in the freezer for a few minutes or fill it with ice to chill, then discard chilling ice. Add one large ice cube or enough ice cubes to the glass to come up about halfway.
Measure spirits
Pour 2 oz Bushmills Irish whiskey and 0.5 oz Lazzaroni amaretto over the ice.
Add cinnamon
Add 0.25 oz cinnamon syrup (or 1 dash of cinnamon-spiced simple syrup). If you prefer a subtler spice, use 0.125–0.2 oz instead. Optional: add 1 dash Angostura bitters for additional aromatic depth.
Stir
Gently stir the mixture with a bar spoon for 15–20 seconds to chill and slightly dilute, integrating the whiskey, amaretto, and syrup.
Serve
Serve immediately on the rocks. Sip and enjoy the balance of Irish whiskey, almond sweetness from the amaretto, warm cinnamon spice, and bright orange aroma.
