Prepare the brie

Remove brie from refrigerator 20–30 minutes before serving to reach room temperature for optimal creaminess. If desired, trim a thin strip of rind from the top to expose some creamy interior, or leave whole for serving.

Slice the apples

Core and thinly slice the apples into 1/8–1/4 inch wedges. Place slices in a bowl and toss immediately with the lemon juice to prevent browning. Arrange slices on a platter in a fan or stacked groupings next to the brie.

Prepare thyme

Strip thyme leaves from stems and lightly bruise with the back of a spoon to release aroma. Reserve about 1 teaspoon for bread and the rest for sprinkling over the finished dish.

Warm and oil focaccia

Preheat oven to 350°F (175°C). Arrange focaccia slices on a baking sheet, brush each slice lightly with extra-virgin olive oil (about 2 tbs total across slices). Sprinkle the optional 1 tsp sea salt evenly over the top if using. Warm in the oven for 6–8 minutes until heated through and slightly crisp at the edges. Remove and keep warm.

Alternative: Toast on skillet

If you prefer, heat a skillet over medium-high heat and toast slices 1–2 minutes per side with a thin drizzle of oil until golden.

Assembly & Finish

Place the warmed focaccia slices on a serving board or platter. Set the brie wheel in the center or slightly off-center. Neatly arrange the lemon-tossed apple slices beside and partially over the brie so guests can pair apple with cheese and bread.

Drizzle 2 tablespoons of runny honey over the apples and the exposed surface of the brie. Reserve about 1 tablespoon of honey for individual drizzling at the table if desired.

Sprinkle the bruised fresh thyme leaves evenly over the apples, brie, and bread. Finish with a light crack of black pepper across the brie and apples (about 1 tsp distributed).

Serve immediately while the focaccia is warm and the brie is soft and creamy. Encourage guests to spread brie on focaccia, top with apple slice, a bit of thyme and an extra drizzle of honey.
