Directions

  1. 1

    Cook the Pasta

Start by cooking the linguine according to the package instructions in a large pot of salted boiling water until al dente. Drain, reserving about 1/2 cup of the pasta cooking water.

  2. 2

    Sauté the Shrimp

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes; sauté for about 1 minute until fragrant. Add the shrimp to the skillet, season with salt and black pepper, and cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

  3. 3

    Make the Sauce

In the same skillet, add the white wine and lemon juice. Bring to a simmer and let it cook for about 2-3 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.

  4. 4

    Combine Everything

Return the shrimp to the skillet, and add the remaining 2 tablespoons of butter and the chopped parsley. Toss everything together until the shrimp are well coated in the sauce. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

  5. 5

    Serve

Serve the shrimp scampi over the cooked linguine, garnished with additional parsley if desired. Enjoy!
