Preparing the Lamb Rack

Preheat the Oven
Preheat your oven to 400°F (200°C).

Season the Lamb
Rub the rack of lamb with olive oil, salt, and black pepper. Ensure it is evenly coated.

Prepare the Garlic and Herbs
Mince the garlic cloves and chop the fresh rosemary and thyme. Mix them with lemon juice to create a marinade.

Marinate the Lamb
Spread the garlic and herb mixture over the seasoned lamb rack. Let it marinate for at least 30 minutes at room temperature.

Roast the Lamb
Place the marinated lamb rack in a roasting pan and roast it in the preheated oven for approximately 25-30 minutes for medium-rare doneness.
Preparing the Potato and Vegetable Side

Prepare the Vegetables
Wash the baby potatoes and cut them in half. Peel and slice the carrots into sticks.

Roast the Vegetables
In a bowl, toss the baby potatoes, carrot sticks, and green beans with olive oil, salt, and black pepper. Spread them on a baking sheet.

Bake Alongside the Lamb
Place the baking sheet with vegetables in the oven during the last 20 minutes of the lamb's roasting time.
Serving the Dish

Rest the Lamb
Once the lamb is done roasting, remove it from the oven and let it rest for about 10 minutes before slicing.

Plate the Dish
Slice the rack of lamb into individual chops and serve alongside the roasted potatoes and vegetables.
