Brandy Shallot Demi-Glaze Sauce

Method

Preparing the Pork Chops

    Season the Pork Chops

    Pat the pork chops dry with a paper towel. Season both sides with salt and black pepper.

    Sear the Pork Chops

    In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until golden brown. Remove from skillet and set aside.

Making the Brandy Shallot Demi-Glaze Sauce

    Sauté Shallots

    In the same skillet, add the shallots and sauté for 2-3 minutes until they are translucent.

    Deglaze the Pan

    Pour in the brandy, scraping the bottom of the pan to release any browned bits. Let it simmer for about 2 minutes until slightly reduced.

    Add Beef Stock

    Add the beef stock and fresh thyme. Bring to a boil, then reduce heat and simmer for 10-15 minutes until the sauce thickens. Season with salt and black pepper.

    Finish with Butter

    Remove from heat and stir in the butter until melted and the sauce is glossy.

Preparing Potatoes and Vegetables

    Cook the Potatoes

    Boil the potatoes in salted water for about 15-20 minutes until fork-tender. Drain and set aside.

    Sauté the Vegetables

    In a separate pan, heat olive oil over medium heat. Add the mixed vegetables, season with salt and black pepper, and sauté for about 5-7 minutes until tender.

Serving

    Plate the Dish

    On a plate, place the pork chops, pour the brandy shallot demi-glaze sauce over them, and serve alongside the boiled potatoes and sautéed vegetables.
