    Prepare the Steak

    Take the New York strip steaks out of the refrigerator and let them come to room temperature for about 30 minutes. This helps ensure even cooking.

    Season the Steak

    Rub both sides of the steak with olive oil, then sprinkle generously with salt and black pepper. Let the steaks sit while you prepare the potatoes and vegetables.

    Cook the Potatoes

    Peel and cut the potatoes into quarters. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes or until fork-tender.

    Sauté the Garlic

    While the potatoes are cooking, melt 2 tablespoons of butter in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Vegetables

    Add the mixed vegetables to the skillet with the garlic. Sauté for about 5-7 minutes or until the vegetables are tender but still crisp. Season with salt and pepper to taste.

    Cook the Steak

    Heat a grill or skillet over high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

    Finish the Potatoes

    Drain the potatoes and return them to the pot. Add the remaining 2 tablespoons of butter and mash until smooth. Season with salt and pepper to taste.

    Plate and Serve

    Slice the steak against the grain, serve alongside the mashed potatoes and sautéed vegetables. Garnish with fresh parsley before serving.
