Preparation of Halibut

    Prepare the Halibut

    Pat the halibut fillets dry with paper towels and rub them with olive oil, salt, and black pepper.

    Grill the Halibut

    Preheat the grill to medium-high heat. Grill the halibut fillets for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.

    Prepare the Toppings

    While the halibut is grilling, crumble the feta cheese and slice the tomatoes. Mince the garlic cloves.

    In a small bowl, combine lemon juice, minced garlic, and a pinch of salt. Mix well and set aside.

    Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.
