Bring steaks to room temperature
Remove the USDA Prime steaks from the refrigerator and place on a plate. Pat both sides and the edges dry with paper towels. Leave uncovered at room temperature for 30–45 minutes to take the chill off. Dry surface will encourage a good sear.

Season both faces and the edges of the steaks generously with kosher salt (about 1 tbs per side for the two steaks total) and freshly cracked black pepper. Press the seasonings lightly so they adhere.

Flip the steaks and sear the second side for 2–3 minutes. If you are aiming for medium-rare (about 125–130°F final), and your steaks are 1–1¼" thick, you can finish in the oven for 3–5 minutes. For stovetop-only finishing, reduce heat to medium and continue cooking while basting (next step) until desired temperature is reached.

Add the unsalted butter, crushed garlic cloves, thyme, and optional rosemary to the pan. Tilt the pan slightly and spoon the melted butter, garlic and herb-infused juices over the top of the steaks repeatedly (baste) for 1–2 minutes. This adds flavor and encourages an even cook.

If using the oven: transfer the skillet to the preheated oven for the recommended time. Use an instant-read thermometer: remove steaks when internal temperature is approximately 5°F below target (120–125°F for medium-rare, 130–135°F for medium). If finishing on stovetop, monitor with the thermometer and remove at the same 5°F-under guideline.
Resting & finishing

Transfer steaks to a cutting board and tent loosely with foil. Rest undisturbed for 8–10 minutes for 1–1¼" steaks (this lets juices redistribute and carries the temperature up to the final target).

While resting, spoon any pan juices into a small bowl and skim off excess fat if desired. Optionally whisk a small pat of cold butter into the juices to make a quick pan sauce.
